Recipe: Fruit Cobbler

This is one of my favorite desserts this time of year. Nothing is better than piping hot berry (or apple, or peach!) cobbler with a huge dollop of whipped cream mounded on the top, in my very humble opinion. It's an easy recipe in two parts.

Filling

Preheat your oven to 375F.

Mash enough berries to make about 3 cups. Add 1/2 cup sugar, and set aside.

Meanwhile, combine 4 tbsp flour and 1 1/2 cups of apple juice in a saucepan. Cook over medium heat, stirring, until it comes to a boil. Add the fruit and cook gently over low heat until the fruit is tender. Pour the mixture into a 2 qt casserole.

In a large bowl, sift together 1 1/4 cups all-purpose flour (I often use half white and half whole wheat), 3 tbsp sugar, 3 tsp baking powder, 1/4 tsp salt, and a generous pinch of cinnamon. Cut in finely 1/3 cup of butter, then add 1 slightly beaten egg and 1/2 cup milk. Stir with a fork until it comes together.

Drop biscuit dough in small spoonfuls onto the top of the berry mixture. Bake for 35-40 minutes. Serve with whipped cream on top!
