Recipe: Tortellini Salad

This is one of my favorite "in the fridge" summer foods -- as I'm making a big bowl of it today, I thought it only fair to share the recipe! This satisfying salad can be served on its own or as a side dish. Quick and easy to toss together, it’s a great one to take along to a potluck or BBQ. Tonight I'll be using fresh dill, clipped from the pot on my step!

Ingredients:

700g (approx) fresh or frozen cheese tortellini 1 ½ cups feta, crumbled or cubed 3 green onions, chopped

Dressing:

6 tbsp grapeseed oil (or sunflower oil) 1 ½ tbsp lemon juice 1 tbsp dried dill weed 1/4 tsp sea salt

Prepare tortellini according to package directions. Set aside.

In a mason jar combine the dressing ingredients. Cover with lid and shake until mixture emulsifies.

In large bowl mix pasta, feta and onion. Drizzle with dressing, ensuring even coverage. Cover and chill until serving.
