Recipe: Curried Lentil Barley Salad

I've been craving curry like crazy for the past few weeks -- craving, in particular, a curried lentil salad I used to eat at Acton's in Wolfville, NS, back in university. I threw on my thinking hat a few days back and came up with my approximation, tossing in some barley to add more of a protein punch.

Ingredients:

2 cups dried brown or green lentils
1 cup pot barley

1/3 cup cider vinegar
1/3 cup lemon juice
1/4 cup grapeseed oil
1 tbsp salt
2 tsp garam masala
1 tsp ground pepper
1 tsp turmeric
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp ground ginger
1/4 tsp cayenne

Cook the lentils and barley separately, rinse with cold water and drain.

Whisk remaining ingredients together in a small bowl.

Combine lentils, barley and dressing in a large bowl. Stir and refrigerate until serving.
