Chocolate Orange Dreamsicle Cookies

Either way, this is the cookie for you! Fancy enough for gifting, great for bake sales, and supremely satisfying with a hot cup of coffee or tea.
Ingredients:
1 cup butter, room temperature
1-1/2 cup granulated sugar
2 tbsp orange zest (approx 2 oranges)
1-1/2 tsp orange extract
1/2 tsp vanilla extract
1 egg
3 cups white flour
2 tsp baking powder
1 tsp salt
1 tsp ground cinnamon
1/2 tsp ground ginger
Directions:
Preheat oven to 350F.
In a large bowl, cream together butter and sugar. Add orange zest, orange extract, vanilla extract, and egg. Beat until combined.
In a second bowl, blend together the dry ingredients. Add dry ingredients to the wet ingredients in the large bowl and mix until dough comes together. Dough will start out crumbly but come together quickly. You may need to finish mixing it by hand (squeezing dough together). Dough should be soft like play dough (not sticky).
Using a rolling pin, roll dough out to 1/4” thick on lightly floured surface. Cut into rounds with small drinking glass or 2” cookie cutter.
Bake at 350F for 7-8 minutes.
Transfer to wire cooling rack and allow cookies to cool completely before moving to next step.
Melt chocolate in top of double boiler. Dip half of each cookie into the melted chocolate. Cool on parchment-lined cookie sheet.
Store in airtight container between layers of parchment paper.
Makes 8-9 dozen cookies.
