Day 34 - Pho

Today I pulled out the Instant Pot to make pho broth for supper — it has been awhile since I’ve made it, and even longer that I’ve made it for everyone. When everyone was still at work and school, it was mostly something enjoyed by me and my eldest for lunches. It went over with the younger crew far better than I expected, which was great to see as it is an easy, inexpensive meal.
I also dusted off the notes for my “No Knead Bread” recipe from several years ago. I think it’s time to finally get it up on the blog, as I’ve been sharing it fairly widely in its unpolished form. I have a bowl of dough rising right now to bake tomorrow morning.
My husband can have his sourdough — I prefer the ease of this technique.
I have largely been avoiding the news today — I’ve checked in a few times for updates on Nova Scotia, but the panicked feeling it gives me was an indication that I needed to step away. Instead, I pulled out a new board game to play with the younger kids — Spottington is EXCELLENT for the 4-10 age range, and I can see our kids getting a lot of mileage out of it.
I’ve been thinking about what the next big “Quarantine Trend” will be once bread making and hair cutting become boring, and I think urban gardening / victory gardens and quilt making are top of the list of possibilities. Who knows? It might be just the incentive I need to pull out the dress I was making for #Kid4 when she was a baby and finish it so that #Kid6 can wear it!
We had a load of garden soil delivered by dump truck today, so we can finally get started filling and planting them with hardy transplanted perennials and fruit bushes/canes from friends. So far we have some strawberry plants and some horseradish to get into the ground, and I’ve a couple leads on raspberries. I’m looking forward to seeing it all start to take shape over the next few weeks.
