Sweet Red Chili Sauce

Sweet red chili sauce is my condiment of choice.
I put it on everything.
I’ve even been known to put it on perogies (don’t judge).

One little 270ml bottle of premium branded deliciousness can easily run $5. Wouldn’t you rather spend that on something else? For $5 or less you can make approximately 750ml, using ingredients most people have on hand and save around $10.

Do you prefer your spice “barely there” or “melt my face”?

Ingredients:

8 red jalapeno peppers
8 garlic cloves
1 cup white vinegar
1 cup water
1-1/2 cup white sugar
1 tablespoon fish sauce
2 tablespoon corn starch
2 tablespoon water

1. Remove the stems and seed the peppers. For milder sauce, set aside the seeds from ONE pepper. It you prefer sweet, hot, face-melting deliciousness, ADD THEM ALL.

2. Put everything in the blender expect for the 2 tbsp of cornstarch and the second amount of water. Blend until the skin is reduced to flakes.

3. Pour the solution into a saucepan. Add the reserved seeds. Bring to a boil, then reduce heat and simmer for 20 minutes.

4. Mix cornstarch with remaining water. Add to the pan, and stir. Simmer 5 minutes until thickened.

Makes approx 750ml, or enough to fill one empty Collective Arts gin bottle.
