Recipe: Triple Chocolate Cookies
I love brownies. I mean, I LOVE brownies. I also love cookie recipes that make a batch big enough that my larger-than-average family gets to enjoy more than two cookies each.
This recipe makes 7.5 dozen cookies -- perfect for bake sales and big families, or for freezing ahead -- and pack a huge, chocolatey punch.
Ingredients:
2 cups butter
3 cups dark brown sugar
4 eggs
2 tsp vanilla
4 cups flour
1 cup cocoa powder
1/2 cup cornstarch
2 tsp baking soda
1-1/2 tsp salt
1/4 tsp cinnamon
2 cups semi-sweet chocolate chips
2 cups milk chocolate chips
Preheat your oven to 350F.
Using your largest bowl, cream together the butter and brown sugar. Beat in the eggs one at a time. Add the vanilla.
In a second bowl, sift together flour, cocoa powder, cornstarch, baking soda, salt, and cinnamon. Add to the butter mixture and mix until smooth. Stir in the chocolate chips.
On a greased or parchment lined pan, drop the cookie dough in 2 tbsp scoops, making sure to leave some space between the cookies. Bake for 12-14 minutes.
Use a spatula to carefully transfer the cookies to a cooling rack. The cookies will be very soft -- don't worry, they firm up as they cool!
Makes 7.5 dozen cookies.
