Recipe: Homemade Chicken Nuggets
I have three boys, and our family of 5 is pretty busy. Mealtime prep often needs to be quick, so we have time to enjoy each others' company before dashing off to Cubs, dance classes, school meetings.. the list goes on! Making something everyone will enjoy can often be a challenge, so here's a recipe for homemade chicken nuggets to speed up your own mealtime rush:
Ingredients:
Makes: 6 portions - Prep time: 10 minutes - Cooking time: 20 minutes
- 10 boneless skinless chicken thighs
- 2 cups panko bread crumbs
- 1-1/2 tsp chili powder
- 1 tsp sea salt
- 1/2 tsp ground mustard
- 1/8 tsp celery seed
- 2 eggs
- 1/2 cup buttermilk
Preheat the oven to 450F. Cut the chicken thighs into nuggets of approximately equal side. You can usually get 3-4 nuggets from one chicken thigh.
Combine breadcrumbs, chili powder, salt, ground mustard, and celery seed in a bowl. In another bowl, beat the eggs and stir in the buttermilk. Dip each piece of chicken in the buttermilk mixture, then roll it in the breadcrumb mixture and place on a parchment covered baking sheet.
When complete, place the sheets in the oven on a middle rack and bake for 20 minutes. Serve with your favorite dipping sauce.
All three boys gave them two thumbs up, and the youngest was even sneaking wedges from his brothers' plates -- sneaky monkey! ;)
