Recipe: Spicy Noodles

This recipe came about after a craving for Singapore Noodles or a similar noodle salad from a local sandwich shop. Don't be fooled by the simple name -- this cold pasta salad bites back with a fiery flare! Slurp-able buckwheat soba noodles tossed with a spicy curry dressing make a great side dish as part of a larger meal - top with cashews, cubed chicken or pork, or veggie stir-fry to make this salad a meal on its own!

Ingredients:

600g buckwheat soba noodles

3 tbsp vegetable oil
3 tbsp toasted sesame oil
3 tbsp soya sauce
2 tbsp lemon juice
1 tbsp rice vinegar
1 tbsp fish sauce
6 cloves garlic, crushed and diced
4 tbsp curry powder
1 1/2 tsp ground ginger
1 tsp ground cumin
1/2 tsp cayenne

Prepare the noodles as directed on the package. Drain and rinse thoroughly in cold water. Set aside.

Mix sauce ingredients together. Pour over cold noodles and toss to coat. Chill until serving.

Makes 2 litres of salad.
